Instructions

CURING INSTRUCTIONS: Ham and Bacon: 1 package to 2 quarts water. Cover meat with brine and refrigerate 1 day per pound. BEEF AND POULTRY: 1 package to 1 gallon of water. Cover meat with brine and refrigerate 1 day per pound. FISH: 1 package to 1 gallon of water. Cover fish with brine for 4 to 6 hours depending on thickness. Submerge fish completely in brine. Rinse all products in cold clean water and allow product to dry completely before smoking or cooking.
