Place fish in a mixture of 1 cup milk, 1 cup beer and 1 egg. Allow fish to soak for 20-30 minutes in the mixture. Put some of the breading mixture in a bowl that has a secure lid. To reduce some of the saltiness and to make it crispier very lightly bread the fish. Coat with breading and fry at 375 degrees until golden brown. It is very important your oil never falls below 340 degrees by making sure oil temps have time to recover after each batch, and not overloading your fryer. Fish is finished once the pieces start to float.
