Instructions

Mix seasoning package with 25 lbs. of fatty pork trim that has been ground with a 3/8th plate. Continue to mix until mix becomes sticky, then stuff into 32mm hog casings or package in a bulk meat bag. VENISON can also be used and is a very good option. Simply grind 20 lbs. of venison and mix with 5 lbs. of hog jowl. Mix the two meats with the seasoning pack then regrind them together with a 3/8ths plate.
