Blackening seasoning is a classic Cajun spice blend. Apply this rub on fish, chicken or steaks and place it in a white hot cast iron skillet with a small amount of oil. Fry for 1 minute on each side or until cooked. Excellent way to cook pheasant breasts and also makes the best venison steak you'll ever eat. My favorite is thin cut venison a good coating of seasoning fried extra hot 40 seconds on each side then place between 2 pieces of rye bread. It may also be used as a seasoning for meats and veggies.
