Instructions

Mix seasoning package with 25 lbs. of fatty pork trim that has been ground with a 1/8th" plate. Continue to mix until mix becomes sticky, then stuff into casings or pack in a bulk meat bag. VENISON can also be used and is a very good option. Simply grind 20 lbs. of venison and mix with 5 lbs. hog jowl. Mix the two meats with the seasoning pack then re-grind them together with a 1/8th plate.
